Description: Aged for 18 months in new oak barrels, our Côtes du Couchois Signature comes from a plot of old vines giving it substance, power and structure.
In the vineyard
The Domaine du Beauregard conducts sustainable viticulture on our 16 hectares of vines. Our plots are located in the communes of Saint Sernin du Plain with a terroir characterized by versicolor clays and sandstone banks, Sampigny les Maranges, Dezize les Maranges, Paris l'Hôpital and Cheilly les Maranges with their clay-limestone terroir.
We favor plowing, the passage of interstocks and natural grassing and organic amendments in order to maintain the fertility of the soil and to nourish the vine by promoting quality grape production and avoiding excess vigour.
We try to respect the influences of the Moon as much as possible on our work in the vineyard, such as pruning in the descending moon, disbudding in the waning moon or even trimming in the descending moon.
We use the grape varieties that make Burgundy famous:

Pinot Noir for our Burgundy red wine appellations : Bourgogne Pinot Noir, Bourgogne Hautes Côtes de Beaune, Bourgogne Côtes du Couchois, Maranges, Maranges 1er Cru.

Aligoté and Chardonnay for our Burgundy white wine appellations : Bourgogne Chardonnay and Bourgogne Aligoté
In the cellar
We favor wine work that highlights the vintage, the terroir and the appellation; while limiting inputs and taking into account the lunar influences on our rackings and bottlings.
Wine gives us the rhythm to work with it. All our wines are aged in French oak barrels; except our Bourgogne Aligoté which is aged in vats.
Our know-how is to produce red Burgundy wines with a beautiful aromatic intensity, finesse and a balanced structure; white Burgundy wines with a beautiful bouquet, fine finesse and sought-after minerality.
The packaging
Right up to the packaging, we make a point of respecting the environment.
Our boxes remain raw without surface treatment to discolor or color them. We choose a technical stopper with 95% cork (guaranteed without TCA) and treated with alternating steam and hot air and not chemicals.
Tasting notes: Deep ruby color with garnet reflections. An intense and aromatic nose with aromas of jammy black fruits and sweet spices. The mouth is ample and powerful with present and fine tannins.
Pairing: A lovely drink to pair with pasta or barbequed meats, or to enjoy on its own.
Alcohol content: 13%.
